Tips From Your Bella Chefs
Use cheese grater to grate cold butter into small pearl-size pieces for an extra-flaky biscuit. Freeze butter for 30 min. for easy grating. For buttermilk add squeeze of lemon or 1 tsp cider vinegar to milk before adding to mix. Let stand 1-2 min. until lumps start to form. Thin milks won’t get lumpy but will add needed acid to mix.
For savory biscuits add quarter cup shredded cheddar cheese and 2TBL chives, chopped. Add half-tsp ground black pepper and dash of grated nutmeg.
